Pra-Desain Pabrik Mosof (Modified Sorghum Flour) Dari Biji Sorgum Dengan Proses Fermentasi Bakteri Lactobacillus Plantarum Sebagai Subtitusi Tepung Terigu

Abstract
Perancangan Pabrik MOSOF dari Biji Sorgum direncanakan mulai konstruksi tahun 2026 di Lamongan dan beroperasi pada tahun 2028 selama 330 hari/tahun. Lokasi dipilih berdasarkan hasil AHP dari ketersediaan bahan baku tertinggi di Jawa Timur, sekitar 13.500 ton/tahun pada 2022, ditargetkan mencapai 154.464 ton/tahun pada 2024, dengan Jawa Timur sebagai pasar terbesar. Produksi Tepung Sorgum mencapai 80.000 ton/tahun dengan bahan baku Biji Sorgum, Bakteri Lactobacillus Plantarum, dan nutrient. Proses produksi terdiri dari tiga tahapan: continous pre-treatment untuk mengupas kulit biji sorgum dan pencucian, pengolahan produk melalui fermentasi menggunakan bakteri Lactobacillus Plantarum dengan suhu 30°C, dan proses continous meliputi pengeringan, penghalusan (penepungan 80 mesh), dan pengemasan.Studi evaluasi ekonomi pabrik menunjukkan estimasi modal (CAPEX) Rp 561.176.958.858,691 dan biaya produksi total (OPEX) Rp 592.571.491.247,285. NPV adalah Rp 576.219.666.223,592, IRR 24%, dengan bunga pinjaman bank BNI korporasi 8% per tahun. Waktu pengembalian modal (POT) 3,6 tahun dan BEP 45,731%. Berdasarkan analisa ekonomi, pabrik MOSOF dengan kapasitas 80.000 ton/tahun layak didirikan secara ekonomis.
