Preparasi Penentuan Ca, Na, dan K dalam Nugget Ayam-Rumput Laut (Eucheuma cottonii)

Abstract

Pengaruh penambahan rumput laut merah Euchema cottonii terhadap penentuan kadar Kalsium, Natrium dan Kalium didalam nugget rumput laut dipelajari dalam penelitian ini. Nugget rumput laut yang digunakan dalam penelitian ini memiliki 5 variasi massa rumput laut yang ditambahkan dalam nugget yakni 50 g (16,67%), 75 g (23,08%), 100 g (28,57%), 125 g (33,33%), dan 150 g (37,50%). Pada penentuan kadar air sampel yang dilakukan didapatkan bahwa sampel rumput laut merah segar Eucheuma cottonii memiliki kadar air sebesar 91,3803 %. Hasil kadar air  pada sampel nugget kontrol sekitar 59,4942 %. Pada nugget rumput laut didapatkan hasil kadar air berkisar antara 73,0972 % - 77,7232 %. Proses destruksi pada penentuan Ca, Na dan K dalam Nugget Ayam-Rumput Laut (Eucheuma cottonii)  dihasilkan  larutan  jernih yang menunjukkan proses destruksi telah sempurna
