Ekstraksi Senyawa Antioksidan pada Nugget-Rumput Laut Merah, Eucheuma cottonii

Abstract

Pada penelitian ini telah dibuat nugget-rumput laut dengan bahan dasar daging ayam dan rumput laut merah, Eucheuma cottonii, yang berfungsi sebagai pengganti tepung terigu. Penelitian ini bertujuan untuk mengekstrak senyawa antioksidan yang terdapat pada Nuggeit-Rumput Laut. Rumput laut merupakan salah satu sumber pangan yang kaya akan antioksidan. Beberapa senyawa antioksidan yang terkandung di dalamnya diantaranya vitamin C, vitamin E, senyawa polifenol, serta beberapa pigmen. Metode yang digunakan untuk mengekstrak senyawa-senyawa antioksidan tersebut yaitu metode maserasi dengan pelarut metanol. Maserasi dilakukan pada Rumput Laut (RL) dan Nugget Tepung (NT) sebagai sampel kontrol serta pada sampel Nugget dengan penambahan Rumput Laut (NRL) sebesar 16,7%; 23,1%; 28,6%; 33,3%; dan 37,5%.
